How do I use the temperature hot icon if the temperature is above 25°c and the temperature cold icon if it is below 10°c and in between the normal temperature I on??? I thought it is done automatically?

You’ll have to make your own set of custom icons.
You can copy from the standard icons

probably copy
temperature.svg to mytemp-10.svg
temperature-hot.svg to mytemp-25.svg
temperature-cold.svg to mytemp.svg
