Not sure if this helps but I use the MyQ garage door opener and binding. I had to use two metadata’s to get proper statuses in Homekit, both garagedooropener.currentdoorstate and garagedooropener.targetdoorstate.
So it seems setting the OPENING/CLOSING values for current state is really not necessary. The Home app shows the Opening/Closing states also if current state is only set to OPEN or CLOSED and as long as current state is different from target state.
