Connecting the sensor to an ESP is pretty neat (and also really flexible). [This](https://community.openhab.org/t/install-maintain-openhab-on-raspi-in-docker-together-with-mosquitto-duplicati-influxdb-samba-etc-step-by-step-instruction/141689/24) is my description of getting MQTT working. [Here](https://community.openhab.org/t/use-case-water-flow-sensor-for-indoor-outdoor-usage-tasmota-flashed-esp-cheap-flow-meter-mqtt/139342) you find a description of connecting a device to an ESP. And [here](https://community.openhab.org/t/use-case-control-tvs-via-ir-from-openhab-tasmota-flashed-ir-blaster-mqtt/139279) is a description of getting such a device via MQTT into openHAB.
