I tried to set up the influxDB on Openhab 5.0 the stable one. I run into two issues first the port 3000 is also used from zwave JS might be when a information when you install the add on helps other users. So I manged it and change the port.
But I still get the problem with the java driver and here I have no clue at all, has anybody an idea with the Java driver?

What problem? The InfluxDB driver library is part of the add-on. You shouldn’t need to do anything at all.
I test it again. I get the following with journal -f:
