Since Lowe’s shut down Iris, would it be possible to use the old hubs as a bridge, or am I completely barking up the wrong tree?

Since Lowes released the code as open source (see https://github.com/arcus-smart-home) the answer is that it should theoretically be possible. I can’t get any more specific than that though. I don’t know how Iris worked in the first place and don’t know how this FOSS version of it is supposed to replace it. But because it is FOSS, if it doesn’t have an API suitable for integration with OH, it could be modified to include one.
