My hw server collapsed and I don’t have a backup I would need to move the installation to a new server. Which files need to be copied? (OpenHab2)

You still have access to the server’s filesystem ?
Have a look to /usr/share/openhab2/runtime/bin/backup that script can be used to create a backup and you also find the directories that are put into the backup by using the script.
