Override UoM conversion globally?

I’m running openhab 2.5.x. I’m located in the US, but I want things to report values in SI units. For example, the DarkSky binding uses the UoM system, so my temperatures are being reported by openhab in Fahrenheit. I want them to be in Celsius.

I know I can go and explicitly set the unit on each Item, but I want to address this globally. Is there a place to override the UoM locale?

I think you can do that in PaperUI Configuration -> System -> Regional Settings -> Country/Region.
