I created a graph which shows besides the room temperature over time when the heatnig was turned on and when the window was opened:

Yes and no.
No, there’s not setting that allows you to define what graph is displayed when you click on the list item.
Yes, it’s kind of a long way to go, but you can define your own custom widget for any item that determines how it is displayed in the autogenerated lists.
That way you could build a custom list widget for the temperature item that uses the analyzer action to display a graph with the extra items on it.
