On the application, running on Raspberry pi 4, went to Settings/things/”+”, and Zigbee bindings are not among the offered bindings.

try addon store
expand then bindings then under the openHAB distribution section click the show more scroll toward bottom and you should see Zigbee Binding click on it click install and then review the documents to set it up
