is there any GPS tracker that i can use to track my Cat that is compatible with Openhab. I read an article about someone who was able to track his dog using a GPS tracker and show it in Openhab, but unfortunately with a limited range (small range).

there used to be some 2g battery operated trackers…more for dogs than cats as they were a bit big,
But you’d need something for it to be able to upload to, eg gpsgate or traccar. And then poll the information from openhab. It’s the same process if you have tracking on your car.
If you feel with your cat you won’t make her wear that.
LOL. That looks more like SAT CAT. Or maybe a Catellite Ground Station.
