In theory yes, but ZigBee support is far from being comprehensive. Check the binding docs and search the forum for ZigBee threads.

No, that’s not how it works.
Stuff created via PaperUI is stored in jsondb, stuff created files is just in files. Both are just input structures to some internal structures. Thes internal structure is not the jsondb, jsondb is just an alternative to file based input, but no internal structure.
Things/Item created via file are not existing in jsondb. At least not in the one located under /var/lib/openhab2/jsondb/org.eclipse.smarthome....
