That explains it. When you choose simple a default set of addons in each of those categories are installed and those categories are removed as part of the simplification. I think you can change it in services/system.cfg or maybe addons.cfg The comments list the valid options I think.

Thank you very much! Setting ‘package = standard’ in services/addons.cfg solved the problem.
