I setup openHab for Windows.

How do I get (3) something in the “Control” section?

you do not understand the concepts behind OpenHAB. You need Items linked to the Thing channels.

The control section of PaperUI will show only those channels of things that are linked to an item.
Note that PaperUI is not meant to be used as the UI for daily useage, only for administrative tasks!

With .items files

A good place to start is with the official documentation. Learn how the system works, determine if it will do what you wish, and then try to do it.

“PaperUI is meant for administrative tasks” does not mean to remove it.
You are currently faced with an administrative task - adding Items and linking them to channels of your Things.
This is the job PaperUI is meant for, setting up your system.

When it is set up you will probably use another UI that you can customize for your daily needs. And use PaperUI only occasionally.

It seems that the video I referenced left out how to do -> Items linked to the Thing channels.

I have it up and running.

None of the official documentation is video. Please read it.
