Is it possible to define the format of number item with Paper UI. I want to set the format of a temperature
to [%.1f °C] ?

Yes, you need to define the label of the item as such:

Temperature [%.1f °C]

In the Label field:

Mine are greyed out because I defined the item in text files

You will need to create a sitemap or use HABPanel.
