Which version of the Zigbee library are you using?
Log into Karaf and type:
openhab> bundle:list -s |grep -i zig
When you see versions smaller than 1.1.10, follow this guide to update:
Sometimes it also helps to start a second scan for new devices without having removed the thing. Then it mostly gets discovered fully.
