Pages: how to use String-item with value-options

Using OH4.0.3 with the Balboa-binding and for that I get a String-Item:

value: " "
config:
  options: READY=READY,REST=REST,READYINREST=READYINREST

So, the value of the item is a three value case. Basic-UI uses it ootb like this:
2023-10-09_12h26_18

So, how can I use that within pages? I was under the impression I somehow got to a point, where I could klick on the value (in Main-UI and pages?) and could then choose an entry which opened up at the bottom of the page? but can’t seem to get there again.

On the items itself when you click the you see add item metadata then choose command options.
