So this might be a stupid question but I install the Rest API docs in OH2 but I have no idea how you access them. Can someone point me to where I go to use them?

You should find a link on the dashboard http://openhab:8080/start/index or directly via http://openhab:8080/doc/index.html. (replace openhab with your host name)
