I am running SD-mirroring on my openhabian/Rpi.
In the periods when no backup is made, will it then be possible to remove the sd card (the one for backup of course) and reinsert it, without shutting down the Rpi, and/or will it be possible to switch between several backup cards?

If you have setup mirroring it’ll do ‘diff’ updates once a day so no.
If you want extra copies you can use the one time option. But don’t misuse this for backup purposes. You need another tool for backup such as Amanda.
