Deploying it to my NUC (Ubuntu) and when I’ve finished all I get is the default tomcat “IT WORKS” page.

it is really hard to give any advice or help based on your oneliner…
Please clarify “deploying”. Which instructions did you follow along? My recommendation would be a standard Ubuntu installation followed by an openHABian setup: http://docs.openhab.org/installation/openhabian.html#manual-setup
There are more than one method on that page.
Maybe you didn’t set up java correctly, there are a few other possible causes. Check /var/log/openhab2/openhab.log
to find hints. The easiest path to success is probably the standard setup plus openHABian.
Sorry I didn’t post much info, was both terribly sleep deprived AND in a hurry today. All of the preflight checks came out fine so when I saw that tomcat page and googles came up with nothing I assumed I did something stupid.
And, yeah, I did. I had tomcat installed for some unknown reason. Fixed now.
