Z-Wave/Zigbee still relevant?

At home I only have 1 clear channel available because my nearest neighbour is on channel 7, interfering with 1 & 6. I only have 11 here in the US available for my 2 APs.

Actually, I did choose channel 2,7,12 for my 2.4 ghz WiFi.
Part of my reasoning is to block alien auto-channel-assigning WiFi thingies away from my zigbee network (on zigbee channel 11) and at the same time make some space between my zigbee and my WiFi.
Some day I will pick up a frequency spectrometer and take a look at what is actually going on.

In the US , 1, 6, 11 are the 3 non-overlapping channels. I thought Zigbee chose the least congested channel and have narrow bands to not interfere with Wi-Fi;

We can use channel 1-14 here (Norway, and probably most of Europe).

I would think that it depends on the implementation.
But i have seen some references on zigbee channel 11 as the default.
In my case I have a farm with several buildings I want to cover.
Rf usage and clear channels is not the same at the coordinator as it is on the other buildings.
