I found a similar topic from 2+ years ago from @kooper and I want to share this observation.
The reason that I found this topic was because I had the same question why are my Shelly’s still accessing “api.shelly.cloud” in my case each minute while the cloud is off in this device?
An Off-Topic question because it has noting to do (?) with The Shelly binding.
I notice it because I took a deeper look in Pi-Hole (and this time I added the IoT network)
I am not sure what I did to stop it but it just changed 
Not sure were to place it on below timeline but one of my actions has been to pause the thing of 1 of my shelly’s. Much later I installed the latest firmware on this device.
If you are using Shelly’s you might want to check.
